Three Herb Guacamole

Different herbs have been used by a variety of cultures to treat illness and disease. Herbs used over time have sustained health and even been used to prolong the shelf life of food or mask the taste of foods close to rancid (think meats in hot climates). Fresh parsley is excellent for the liver and kidneys, cilantro is cleansing and alkalizing to the blood, and oregano is a potent anti-viral, anti-fungal, and anti-bacterial. Avocado is the main star here which is high in Vitamin E content. Vitamin is a potent antioxidant and can help the immune system fight infection.

Ingredients:

2 large avocados or 4 small

3 T fresh Parsley (1 handful)

3 T fresh Cilantro

1 T oregano

1-2  green onions

1/2 – 3/4 c chopped cherry tomatoes

2 T lemon

1/2 t Himalayan salt

Mash all ingredients together and serve atop a bowl of torn up kale leaves drizzled with olive oil.
