Goji Granola

Your Granola

 

Most commercial granolas are full of refined sugar and less healthy fats. Making your own takes no more cooking skills than chopping nuts. Ingredients do not have to be exact. Put as much or as little of an ingredient as you prefer. Change the ingredients to your favorites. Add some seeds like sesame or pumpkin to get in some extra needed polyunsaturated fats and Vitamin E in your diet.

Prep Time: 5-10 min

Cook Time: 32 min

3 c oats (gluten-free or organic)

3 T coconut oil

Spread oats on a baking sheet and dollop with coconut oil. Bake for 20 min at 350 degrees F. Remove from oven and add following ingredients:

2 t cinnamon

½ t cloves

½ t allspice

¼ c maple syrup

1 ½ c chopped pecans

½ c currants

1/3 c goji berries

 

Stir to combine. Bake for 12 min more and remove from oven. Stir immediately to keep from sticking. Let cool 30 min and then put in an air tight container to keep from going stale.
