Soft Molasses Acorn Cookies

Ingredients;

coconut oil

organic sugar

garbanzo flour

tapioca flour

sorghum flour

acorn flour

(or substitute a bean or nut flour)

blackstrap molasses

baking powder

ginger, cloves, cinnamon, nutmeg

Cream till fluffy :

1 c coconut oilDSCN0097

1 c sugar

Add:

2 eggs

½ c blackstrap molasses

Mix Separately:

1 c acorn flour

1 c garbanzo flour

1 c sorghum flour

1 c tapioca flourDSCN0101

2 ¼ t baking powder

2 ¼ t ground ginger

1 ½ t cloves

1 ½ t cinnamon

¼ t nutmeg

Add dry to creamed mixture 1 cup at a time. Roll teaspoon size into balls. Dip in granulated sugar. Place 1 inch apart on baking sheet. Press down slightly.  Bake for 10 min at 350 degrees F.
