Buckwheat Gluten-Free Waffles

These waffles are very light and fluffy but are high in protein because of the bean flours used. Try to find organic whole grain buckwheat, which is made by Bob’s Redmill. The other flours can be found at your local indian food store or online. Be sure your soymilk only has soybeans and water in the ingredients. Many soy/almond/rice milks have a myriad of additives, flavorings (natural or otherwise) unhealthy emulsifiers/fats and sugars. I have pictured the only brand I every use: Westsoy organic unsweetened.
2 ¾ c organic soy milk
¾ c oil ( ½ c coconut oil, melted and ¼ c olive oil)
¾ t salt
1 c buckwheat flour
1 c garbanzo flour
¾ c sorghum flour
¼ navy bean flour (or sorghum flour)
2 T baking powder
Mix wet and dry ingredients separately and then incorporate dry into wet ingredients with a egg beater. Use about 3 T batter on waffle maker.
Serve with apple compote and/or molasses and a glass of fresh squeezed grapefruit juice. Molasses is a great option for vegans/vegetarians because of it’s iron content.
