Curried Lentils

Lentils have 22% daily value of thiamin (B1) and have the most complex amino acids of all legumes. Thiamin is important for energy metabolism. Deficiencies tend to occur in alcoholics or a poor diet leading to Beri Beri.

Curried Lentils

1 c dried lentils, soaked overnight in filtered water and sprouted two days

Add to:

4 c water

1 can diced tomatoes

1/2 diced onion

1 clove garlic

1 t salt

1 t cumin

2 t coriander powder

1 t tumeric powder

Cook one hour on low and serve. (This can also be cooked at this point for 2-3 hrs until beans are as soft as desired.)

To increase the flavor of this dish or change into another dish on day two do the following steps: (5 min prep time, 3 hrs cook time).

Do this when you will be home for a few hours to allow to cook or it can be placed in a crock pot on low with an extra cup of water for 6-8 hrs)

Bring to boil and simmer 30 min:

4 leaves greens (BOK CHOY, Kale, Spinach, Mustard greens, etc)

1/2 onion

1 carrot

1 leaves of three celery sticks

Save broth as a soothing drink on its own, this is perfect to rehydrate the body in the morning. If you are finding yourself exhausted by 2 pm as a coffee drinker, try this for two weeks to replace your coffee in the morning.

(5 min prep time):

Puree in blender veggies with a bit of the broth.

Add to lentils and add 1 c filtered water. Cook on low for two to three hours till beans have broken down and you have a beautiful creamy orche dish full of comforting and complex flavor.

Served with a side of bok choy, broccoli, and an egg would make a lovely topping to this as well.
