Mock Chicken Salad

Eating less meat has been linked to lower incidence of cancer and heart disease. This is a great dish to try and reduce your meat intake. It is especially great to take on a picnic or the hot summer when a meat dish will go bad (or sour) faster.

Tempeh is a natural food product made by cooking and then fermenting soybeans over a few days process which requires much technical expertise. Thank goodness for Hearty Vegan’s Organic line! The result is a meaty tasting concoction great for use as a meat substitute. I also like to slice, batter, and fry for a taste just like chicken fingers. 




6 oz tempeh chopped or torn up and roasted at 350 for 15 min and then at 400 for 10 min or till lightly browned (don’t preheat oven)

¼ c mayonnaise (handmade or veganaise)

¼ c finely diced tofu

2 T fresh mint leaves

Grated zest of one lemon

1/4 c diced red onion

1 celery rib, diced


½ t salt if using homemade mayo

¼ t pepper

Make it your own by adding a fresh herb of your choice.
