Steamed Kale with Mushrooms

Kale is one of the healthiest veggies you can eat and should be consumed at least once or twice a week, but for the ailing in health or ultra healthy it should be eaten every other day or more. Eat at least 2 cups.  Kale’s flavinoids such as quecertin and kamperferol make it a perfect veggie for fighting inflammation and oxidative stress. Steaming it is a good way to eat it if you are interested in lowering your cholesterol. 

2 bunches of kale, sliced

6 mushrooms, thinly sliced

3 garlic cloves

2 T miso

Fry mushrooms in a large sauce pan in a little bit of olive oil, add garlic halfway through. It will take about 10 min for mushrooms to fry on medium low heat (3 on electric setting).  Dissolve miso paste in 1/2 c water. Add sliced kale to pan and pour miso on top. Cover and let steam for 15-20 min. Be sure to keep heat low to prevent toughening the kale. Kale is done when bright green and very soft to the tongue.
