Chinese Chicken or Tofu

Chinese Chicken or Tofu

Serves: 6

If you are using tofu just substitute it for the chicken in of the steps. The tofu should be cooked on high till it browns and then flip it. You may want to stir in the tofu with the sauce at the end or drizzle it with tamari sauce (a natural soy sauce) while cooking for more flavor. This dish is amazing in that it tastes like unhealthy Chinese food but is free of the fat and chemicals.

Ingredients:

1 1/2 lb chicken breasts or 1 block of tofu

Brown rice

Vegetables of your choice

Or

1 red pepper

1 yellow pepper

1 leek or half an onion

2 c raw sliced green beans

1 bunch broccoli

Make Sauce:

2 T tamari or soy sauce

2 T honey

2 T toasted sesame oil

1 T lemon grass or lemon zest

2 t fresh grated ginger

¼ c rice vinegar

  • Bring 5 cups of water to boil.
  • Slice chicken into half inch pieces.
  • Pour half of sauce over sliced chicken breasts and let marinate for 30 min to two hours.
  • Rinse two cups of brown rice in water. Or let soak in a bowl of water 5-10 min, drain and add to boiling water. Bring water and rice to boil and then turn on low. You may add ½ t salt if desired. Let rice cook for 45 min.
  • Slice peppers and onion. If using leek and it is dirty soak in a bowl of water and drain
  • Cut off ends of green beans and cut them in half
  • Cut flourettes off of broccoli stems (saving for another dish)
  • Heat 3 T oil (coconut) in large pan till oil is shimmery
  • Fry chicken in three or four batches, cooking each batch for five min and flipping pieces halfway (2 min per a side)
  • (cooking in batches prevents the pan from getting too cool or “watery”, this allows nice browning to occur)
  • Put cooked chicken aside in a bowl
  • Fry onion/leek and peppers for 15 min on medium heat in the same pan
  • Add 2 T tapioca starch and ¼ c water to sauce
  • Turn the heat down to low. Push peppers to one side of the pan and put the broccoli on the other side, sprinkle green beans on top and pour sauce over top
  • Cover pan and let sit on low heat for 5 min
  • Stir all veggies together and serve over brown rice with chicken on top
  • You may also add chicken back in pan with veggies but do not use the liquid in the bottom of the bowl as this will make things mushy/watery.
  • Serve over brown rice
