Carrot Raisin Salad

Carrots are high in fiber and beta-carotene, the beta-carotene is an excellent antioxidant and the carrots includes all the cofactors, or other substances the beta-carotene needs to work well in your body. The pineapple has bromelian which Is an enzyme that can assist digestion and well as fight inflammation.




5-6 carrots

½ lemon (juice)

1 t honey

3 T yogurt (preferably greek or goatsmilk)

1-2 T olive oil

1/ 3 c raisins

¼ c pineapple (diced and fresh, dried, or canned)


Grate carrots and mix with other ingredients. Taste and add salt if desired.
