Coriander Crusted Salmon

Be sure to use wild caught salmon only to avoid the high mecury content in farmed salmon. This is especially true if dealing with any health issue. Lemon juice and zest can be used in place of the lemongrass if desired. If using lemon put it on the fish before rubbing with oil.

1 lb salmon

2 t sesame oil

1 T lemongrass

1 T whole coriander

Place salmon on top of foil in a glass pan. Use a foil that is twice the length of the salmon piece. Rub salmon with sesame oil and sprinkle with lemongrass and coriander that has been crushed or ground. Enclose the fish in a foil “tent”.  Bake at 250 degrees F for 20 min, turn oven to 325 and bake 5 – 10 more min.

Serve with Indian potato hash.
