Fennel and Brussel Sprouts
If you think brussel sprouts are boring and taste no better than cabbage, try this tasty recipe. Try to pick the brussel sprouts that are small or if you can find them on the stalk the flavor is phenomenal.
Brussel sprouts are part of the cruciferous family of vegetables. This family has many flavoinoid antioxidants that have key cancer fighting properties. Their ITC’s also have anti-inflammatory and anti-cancer and detoxification properties. Like other smelly cruciferous vegetables, their sulfur compounds assist with Phase II detoxification. And don’t forget like all vegetables their high fiber and low glycemic index makes them excellent for diabetics and heart disease.

1 lb brussel sprouts
1 clove garlic, crushed
2 T orange juice
2 T olive oil
1/3 – 1/2 c diced fennel (2 large stalks or stems)
¼ red onion, diced
Steam brussel sprouts till bright green. Toss with the rest of the ingredients. Serve warm or cool
