Nightshade Free Salsa (Black Bean and Avocado)

Black Bean Avocado Salsa

This salsa is a great alternative if you are on a healing (macrobiotic) diet and would like an alternative to using the tomatoes and peppers that are in the nightshade family. The daikon radish can usually be found at asian or Indian food stores. They also grow very easily in less than thirty days.

1 can organic black beans

½ or 1 avocado

1/3 c cilantro

1/3 c parsley

2 garlic cloves

Juice of 1-2 lemons/limes

2 T olive oil (a big fat drizzle)

½ c diced red onion

1/3 c diced daikon radish

Chop or dice all ingredients to a size similar to the bean size. Mix together and serve on as you would salsa. It would also be good on a baked potato.
