It is good to incorporate many of the healthy principles of a macrobiotic diet. Miso is a wonderful base for soups as it is fermented and this a source of probiotics, good gut germs that assist in digestion. It has a salty and earthy flavor similar to a combination of beef and chicken broth. This soup can be made with any vegetables of your choosing.
This makes 1-2 servings.
Boil 2 cups water and add:
1-2 t miso
3 kale leaves or cabbage leaves, sliced
tofu, cubed (amount you desire)
1/2 daikon radish, sliced
Simmer on low for 5 min.
For an extra treat grate a bit of romano or white cheddar on top, for the flavor not to make it really cheesy.
