Vegetarian Split Pea Soup

I always thought it impossible to make split peas delicious without the use of bacon. Since starting a clean diet which includes no preservatives, I have not been able to afford nitrate-free bacon. Most bacon and processed sandwich meats contain nitrates, a known carcinogen.

1 package split peas

1 turnip, cubed

1/2 sweet potato, cubed

1/2 t fennel

1 bay leaf

1/2 t salt

1 msg free and salt free veggie bouilion cube

1 coriander pods

1 onion, diced

Place all in a crockpot and fill with water (add more if needed while cooking or after chilling to reheat. Cook 4 hrs on med to high heat or 6 hrs on low heat. Reduce to warm until serving. To increase creamyness add a bit of soymilk or cream right before serving.
