Creamy Tomato Sauce

This sauce is perfect for any protein dish or even over potatoes. It is especially good to simmer tofu in and serve over brown rice. The tomato paste is a high source of lycopenes (an anti-oxidant) that are released during the simmering of the first part of the sauce.

Simmer in a pan for 10-20 min.:

2 T tomato paste

1 t dried basil

1/2 t dried (lemon) thyme

1/2 t dried oregano

1 cup vegetable or organic chicken stock or 1 c water and half of veggie msg-free boullion cube

Blend and add to mixture:

28 oz can tomatoes

You can also use fresh herbs at this point instead of dried (doubling the amount)

Add and simmer with tomatoes for 5-10 min.

1 cup soy milk
1 1/2 t tapioca starch

1 lb tofu, cut in chunks (optional)

Pour over your choice or put in small sauce cups for dipping meat or veggies. Especially complementary to tofu or meatloaf. If using tofu, it will absorb more flavor if you simmer it longer.
