Perfect party dish because it is beautiful and delicious.If you are on a healing or low phenol diet, add more papaya or some pinapple instead of the tomatos, or simply omit.

Shrimp Pepitas Salad

0.5 lbs shrimp, cooked and peeled

0.5 papaya, cubed

1 ear corn, corn cut off

0.5 red onion

1 lg tomato, cubed

2 garlic cloves, crushed

1 T grated fresh ginger

3 handfuls pepitas, fried in: ½ t fennel, 1 T evo, ½ t salt, 1 t chili pepper (suit to taste)

Mix all
