Squash Salad Leftovers

Two Ways

If no tomatoes were used:

Fry in pan 30 sec

Olive oil

1 t turmeric

½ t coriander


1 ½ c squash salad

Fry until hot and serve over brown rice, or eat alone.

If tomatoes were used:

Heat in pan

Olive oil

1 T grated fresh ginger

When warm add

2 c of salad mixture

1 handful  swiss chard (or spinach)

Fry for 3 min on medium-high

Pour over bed

Brown Rice
