Summer Squash Salad

Squash Salad

1 yellow summer squash

2 zucchini

2 cucumbers

½ c basil

½ red onion

3 cloves garlic

Zest ½ lemon

Juice of 2 lemons or limes

2-3 T olive oil

Optional: 3 hatch chilies, or a jalapeño

Chop all ingredients, mix together. A tablespoon of extra coconut oil is also delicious. Chill salad for 3-4 hours before eating to allow flavors to meld.

This dish is a great way to get your fiber in for the day, the raw squash is very mild in flavor and is easier to eat in this dish than cooked squash.
