Samosa Empanadas/ Curried Peas and Potatoes
This mixture can be eaten on its own or put into the coconut oil crust for delicious empanadas that are reminiscent of samosas. Try to use organic peas in this dish.
Peas are a great source of protein, vitamin K, folic acid, B6 and vitamin C.
If you are on a healing diet or have health problems do not eat potatoes more often than twice a month. They are not only a simple carbohydrate (terrible for diabetics) but they contain the compound solanine (terrible for anyone with an inflammatory condition or muscular dysfunction).
Turmeric is fantastic, it contains phytochemicals such as cumarin that fight inflammation by inhibiting COX-2 and prostoglandins. It has been used for centuries in many countries for everything from skin lightening and wound healing to cancer treatment.
Fry 3 min:
1/3 c chopped onion
3 garlic cloves
1/2 + 1/8 t coriander
1 t turmeric
1 t cumin
Fry one min, then add:
1 lb boiled and chopped potatoes (2 1/2 c.)
Fry for 3-5 min till a little browned, add:
12 oz frozen peas (defrosted preferably)
Stir till warmed.
Although this dish has protein and carbs so it is a nutritionally balanced meal you can also serve alongside some greens or even a meat dish, or put in my coconut oil crust for a special treat that adds just 10 more min to this 10 min dish.
