Quinoa with Zuchinni and Olives

Quinoa is my favorite grain, not only does it have a mild and delicious flavor, it is cheap, highly nutritious and easy to find. I also love this grain because you can add just about any veggies and spices with a little garlic to make a fantastic one dish meal. Quinoa has nine essential amino acid making it the best grain to eat with respect to a vegetarian protein source. The following lists some of its great nutrients and their benefits:

Lysine – tissue repair and growth

Magnesium- blood vessel relaxation

Mangenese, copper- cofactors for superoxide dismutase, prevents oxidative damage to mitochondria

B2 (riboflavin)- energy production of cells, prevention of migraines

Olive Zucchini Quinoa

1 cup Quinoa

1 zucchini, quartered and finely sliced

1-2 garlic cloves

Extra virgin olive oil

¾ limes

6 kalamata olives, minced

2 sprigs parsley

Tiny sprig dill or ¼ t dried dill

Add all ingredients to hot quinoa cover and let sit 15 min before serving warm.

To cook quinoa add ½ cup grain to one cup of boiling water, turn to low and cook about 15 min or until all water is evaporated.
